This book presents the evolution of military dietetics from 1916 through World War II. It also parallels the development of the profession of dietetics nationally, as many of the early leaders in dietetics had been in the World War I effort, at home and overseas.
Experiences of the dietitians int he two world wars are recounted by several sources and from many dietitians from World War II who submitted narratives for inclusion in this text. Throughout the accounts, their frustrations, sense of humor, professionalism, patriotism, and gratitude for being part of this global effort are found. These remarkable women present another dimension to the shared sacrifices of Americans who lived during this turbulent time.
